It's a Saturday again. I always wonder when I used to have this series every week, till I decided to make it every two weeks, the hectic pace of posting is still the same! Is it proof to the fact that time is running at a speed which none of us can fathom? Oh yes, really!!! Each second Saturday arrives in a jiffy and I am always hurrying up to do the intros and ensure that all posts are on time!!! :)
This week, we have another sweet blogger friend, who I have come across through my recent interactions. None other than Sangeetha, who blogs at
Eat n Eat Little More. An Indian blogger based in Germany, who is a pure vegetarian. When I received an email from her regarding guest posting, I definitely spread my hands out wide. She was actually worried if the dish she was giving me was closer to another
guest post that appeared in this series a couple of months ago! :) There is one thing with cooking - we all may make the same humble peas pulao, but just because of something in our hands that the Almighty has gifted differently for each of us despite putting the same ingredients and same quantities, everybody's peas pulao tastes different!!! Agree to me or not? So I told her, not to worry, especially when her recipe is totally different! So sweet she is, na? :)
One thing I have to admit - she does mention on her blog that despite eating being her passion, she's slim. I've to tell you Sangee, I am jealous of you. I really wish I was like you, hog on and not put on weight!!! :P Jokes apart, let's move on to what she has to say, as being my guest for this fortnight...
Through
blogging I got many co-bloggers now as my friends, have come in contact with
many of them through social media especially Facebook recently. Just few days
back I had a chat with one of my co-blogger Rafeeda A R aka Rafee. I was very
much interested to send a guest post to her and see it up in her space. No need
to explain about her. In fact almost many bloggers will be knowing about her. I
usually see many guest posts coming up almost biweekly. I truly appreciate her
for the dedication, being a working mother with kids to look after, isn't a
small job. Her space is so very full with varieties from around the world. I
really enjoy reading the recipes up in her space, I'm a vegetarian but still I
enjoy reading each post of hers no matter what she posts. I like to read out
the initial part up till the ingredients if it is a non vegetarian recipe, else
I go through fully. Reason behind reading that initial paragraph is due to the
absolute simple way she puts up what she wants to tell. That definitely either
has humor or emotion involved in it. I love her blog and her write ups.I
loved her blog name too. Even I have a very big sweet tooth and love to gobble
up any number of sweetmeats. That is very much evident from my space with the
umpteen number of desserts.
Cooking
is an art and I believe as we work on it, it tends to improve. For me to tell
frankly I was literally a big zero in cooking till I got married. Even now I
don't believe I'm an expert but yes I can manage cooking for a big crowd at
ease. I was very busy with my life when I was in India with job that I used to
end up coming so late sometimes home that my better half would prepare for me a
simple dinner and wait. Some days he used to get me readymade batter for dosas
and keep in refrigerator so that I don't go office empty stomach. But now
things have changed a lot, after we came to Germany, I started to stay at home
as I had to give time to my daughter who is growing up and hence gave my career
a break. Now that I'm a stay at home mom, I have to spend my time in daily
chores, looking after my kid asks for more nutritious food at all the times.
Hence started my experiments in my kitchen with varied ways and ingredients in
cooking. Thus came into existence Eat n Eat Little More. My blog is like a
reference for me, whenever I want to know measurements if at all I have doubts
I just go to my space. It is like a cookbook.
Today I'm here to guest post a
simple recipe in one of my favourite blog, i.e Rafee's The Big Sweet Tooth. The
dish I decided to be up in her space is Sweet Corn Rice. Here I share the
recipe.
Ingredients:
Raw
rice-1 cup (Basmati / any long grain rice/ even Sona masoori would do)
Sweet
Corn-1 cup
Onion-1
chopped
Green
chillies-2 chopped
Cumin
seeds-1 tsp
Turmeric
powder-1/2 tsp
Garam
masala-1 tsp
Coriander
powder-1/2 tsp
Oil-1 tbsp.+1 tsp
Lemon-1/2
Salt
to taste
Water
as required
Coriander
leaves/Cilantro to garnish
Recipe:
1.
Wash and clean rice in
twice and then soak in enough water for 20-30 mins. Pressure cook them with
double the amount of water say for 1 cup add 2 cups of water and 1 tsp. of
oil and salt to taste for 1 whistle. Once pressure releases, spread on a plate
so that hey cool down completely. You could very well use left over rice too.
2.
Cook sweet corn
without adding any water in a vessel that fits inside a pressure cooker for 2
whistles or you could use a microwave and cook the sweet corns till they are
completely cooked. Once cooked keep aside.
3.
In a pan add oil add 1
tbsp. of oil and when hot add cumin seeds,as they splatter add green chillies,
onions and sauté till transparent.
4.
Add turmeric powder,
coriander powder, garam masala and salt to taste(keeping in mind that you
have already added salt to rice while cooking rice) and sauté.
5.
Now add cooked sweet
corn and sauté well in low flame. Since it is already cooked no much cooking
required at this stage. Sprinkle lemon juice onto it and give a mix.
6.
Now add cooled rice
and mix well.
7.
Garnish with cilantro
and enjoy this hot with chilled raita or as it is.
